Thyme is a fragrant and essential herb for any spice rack or cooking pantry.
Today and for much of history, thyme leaves and oil have been used for medicinal and other purposes.The ancient Greeks believed thyme inspired courage and used it to infuse baths and burned it as incense in temples. The Egyptians used thyme in their embalming rituals. Throughout Medieval times, people put the herb under their pillows to ward off nightmares.

Thyme is unique in that it retains much of its flavor after it's been dried. Our pure dried thyme is wonderful for seasoning a rack of lamb,  roast or baked into a batch of new potatoes. Today, outside the kitchen, thyme oil works as a mouth-freshener and can combat bad breath. Whole dried thyme is still used ornamentally. Red thyme oil is used to scent soaps, shampoos and lotions.

Dried thyme should be stored in a cool, dark place, in an airtight container for no more than 6 months.

*When cooking with thyme, be aware that one fresh sprig equals the flavoring power of one-half teaspoon of dried thyme :)
